Chickpeas are a favourite for their flavour and flexibility. Unlike Cullen's other beans, chickpeas much prefer growing in dry conditions, which is why they grow better in prairie provinces such as Saskatchewan and Alberta. Toss them in a salad, chop them into falafels or blend them into hummus – the possibilities are limitless.
